Gravenstein Apple-Red Onion Chutney

Serves 2
2 cups Apples, Diced
1 large Red Onion, diced
8 oz Butter
10 oz Brown sugar
12 oz Apple Cider
½ cup Apple Cider Vinegar
1/3 tsp Chili flake
1 Tbsp dried parsley
1 Tbsp fresh sage, picked
salt and pepper
1 lb pork loin, roasted
To make chutney, in a large pot add butter and chili flakes over medium heat. When butter is melted, add onions and sauté until translucent. Add apples and continue to cook till apples start to soften. Continuously stir. Add brown sugar and cook till dissolved. Add cider and vinegar and cook till reduced. Finish with sage, parsley, salt and pepper. Reduce heat and let thicken.
Serve over roasted pork and enjoy!
