From the 2012 Gravenstein Apple Fair cooking demonstrations. Chef Mei always combines local ingredients (the Gravenstein apple, in this case) with the most delicious Asian Flavors and this salad is a great and simple example.
Gravenstein Apple, Tomato and Carrot Salad
Chef Mei Ibach, Malaysian Mei
Serves 12 - 16
4 Gravenstein apples, peeled and thinly shredded
1 cup cherry tomatoes, cut into halves
½ cup thinly shredded carrot
¼ cup toasted peanut
Lime Citrus Dressing (recipe below)
¼ cup mint leaves
¼ cup cilantro leaves
¼ cup Thai basil leaves, coarsely chopped
Combine the apples, tomatoes, and carrot in a salad bowl or platter, toss in dressing and peanuts. Garnish with mint leaves, cilantro, basil leaves and serve immediately.
Lime Citrus Dressing
½ cup fresh lime juice
3 Tbsp spicy plum chili sauce
3 Tbsp fish sauce
2 Tbsp crushed palm sugar
1 tsp minced garlic
1 tsp minced ginger
1 Serrano chili or Jalapeno, seeded and minced
Combine all the ingredients in a small bowl and whisk thoroughly.
