Herbed Mini Cheese
Biscuits

These
rustic mini biscuits most delicious (and addictive) served warm from the
oven. The batter can be made in advance and chilled until ready to bake.
Stronger cheeses work best, including Parmigiano-Reggiano or your
favorite blue cheese.
2 cups flour
1 Tbsp baking powder
1/2 tsp salt
1/2 cup butter (room temp)
1 1/2 cups grated sharp cheddar cheese
Fresh ground pepper
1/2 Tbsp chopped herbs of your choice
1 cup heavy cream
Preheat over to 400 degrees. Blend the flour, baking powder, salt and
butter until the texture is like cornmeal. Add the cheese and stir in
the cream. Drop by forkfuls onto a sheet pan lined with parchment paper
and bake for 10-15 minutes.
