Rustic Truffled Breadsticks with Proscuitto & Goat Cheese

This simple recipe, combining the saltiness of the breadsticks and prosciutto with the earthiness of the goat cheese and truffle oil, is always a surprise hit at parties. It’s a fun finger-food and the long breadsticks lend themselves to creative serving vessels. We served this at a festive Holiday Cocktail class with chef Mark Stark where we learned that this dish works well as a savory balance to holiday cocktails.
8 quality breadsticks
2 oz fresh goat cheese
truffle oil to taste
4 thin slices of proscuitto
2 Tbsp honey
fresh ground black pepper
Soften the goat cheese then season with the truffle oil. Spread the goat cheese on ⅓ of the bread stick. Split the slices of proscuitto in half lengthwise and wrap the goat cheese portion of the stick with the proscuitto.
To serve, stack the sticks on a plate Lincoln log style. Mix the honey with a little truffle oil and drizzle over the sticks. Grind fresh pepper over the sticks and serve.
